An Thanh farmers sell most of the fiddler crabs they caught to traders on the spot. The rest are used to make fiddler crab sauce for the market and daily dishes


There area about 50 households making fiddler crab sauce in An Thanh commune. The sauce is sold for 120,000 - 130,000 VND/l. Fiddler crab sauce mixed with sugar, garlic, chili peppers, and lemon juice can be consumed with boiled vegetables or meat


An Thanh people often make pastoral dishes from fiddler crabs, such as fiddler crabs cooked with jutes and loofahs and served with salted eggplants, fiddler crabs cooked with noodles, and fiddler crabs roasted with lemon leaves


Ingredients of dishes related to fiddler crabs are familiar to local farmers and easy to find
